Pot roasted Gallina! which is a mature hen. Not something that appears on supermarket shelves in the UK for some reason. My French sister-in-law taught me how to pot roast a rabbit and this is based on that recipe. Lightly seared meat, half a bottle of white wine, mustard and vegetables with some bay leaves for good measure.
